Method

  1. Use already-cooked, chilled skinless chicken. Slice or shred it and weigh 60 g; this is cooked weight.
  2. Dice the tomato and cucumber and shred the washed lettuce.
  3. Spread the hummus over the bread. Add the chicken and salad, fold in the sides and roll tightly. Cut in half for one serving; keep chilled if packing for later.
