Method

  1. Cut the peeled carrot into small, even pieces.
  2. Combine all measured ingredients in a saucepan. Bring to a simmer, cover loosely and cook for about 20 minutes until the carrot is tender and the soup is hot throughout.
  3. Mash a few lentils against the side of the pan to thicken, then divide into two bowls.
