Method

  1. Use a large microwave-safe bowl with room for the eggs to expand. Lightly coat it with the measured oil. Finely dice the mushrooms and grate the cheddar.
  2. Beat the eggs and milk in the bowl. Stir in the mushrooms, cheddar and pepper.
  3. Microwave on high, pausing to stir every 30 seconds. Start checking after about 2 minutes and continue in short bursts until the egg is set throughout; microwave power and bowl size affect the time.
  4. Let stand briefly and carefully remove the hot bowl. This is one serving.
