Method

  1. Pick over and rinse the lentils.
  2. Heat olive oil in a large pan over medium heat. Add diced onion and carrots and sauté until beginning to soften, then add minced garlic.
  3. Add lentils, bay leaf and water. Simmer over low-medium heat for 20–30 minutes, until the lentils soften.
  4. Remove the bay leaf before serving hot.
